This is another dish that’s quick and easy and great for hot summer days.
The ingredient amounts are very flexible (very), but in general it includes:
- 1 cup lentils, rinsed
- 3 peppers (red, green and yellow is best), chopped
- 1 block feta cheese
- Olive oil
- Basil, fresh (chopped) or dried (crumbled)
- Salt and pepper, to taste
Boil the lentils until they are al dente. This is about the amount of time it takes to chop up the peppers.
Mix the lentils with the peppers, crumbled feta and basil. Moisten with olive oil and season with salt and pepper.
