I made several dishes this Memorial Day weekend that were totally amazing (if I may say so). I made guacamole and pico de gallo from Deborah Madison’s Vegetarian Cooking for Everyone. I bought this cookbook on a whim several summers back, and it has never disappointed. Some of the recipes are pretty intense, but you can be sure each and every one will be amazing. It was my first time making guac, and that recipe is now a favourite. Charlie said, “This is quite possibly one of the best things you have ever made.” Oh, and the pico included local Missouri tomatoes and homegrown garlic. Yes! I also made sweet potato fries, and they turned out okay. I still need to refine my technique, but I did at least manage to make them crispy instead of soggy this time. On Monday afternoon I cooked up Southwestern Potato Salad, which I LOVE as a healthy alternative to creamy potato salads. I ate the majority of it within a day. YUM! I think I was on a Mexican food kick.
